Salsa Crockpot Chicken




When Andy is off, he'll cook dinner IF: I give him the recipe and it's EASY. Which usually means a crock pot recipe.

We both love mexican food and you can make a lot of healthier chicken dishes that are mexican -- this is one of those!  We shredded the chicken just before serving it and it ended up being similar to a chicken soup -- we definitely enjoyed it! We left out the sour cream out. Andy put crushed tortilla chips on the bottom before adding the salsa chicken mixture. He then added sour cream and cheese to his. 

Ingredients:

1 pound boneless skinless chicken breasts
1 can cream of cream of chicken soup (low fat version)
1 cup salsa
1 package taco seasoning
1 cup sour cream (low fat version)
1 can of black beans

Directions:

Put chicken, soup, black beans (rinsed and drained!) and salsa in slow cooker.

Sprinkle taco seasoning over everything. Cook on low for 6 hours. If shredding the chicken, pull the breasts out and shred; return back to slow cooker. Stir in sour cream and heat just until everything is combined.
